3 Quick & Healthy Tupperware Salads

A great salad is more than just a bowl of lettuce and a drizzle of a basic dressing! To avoid you opting for an unhealthy lunch at work that leaves you feeling groggy and fatigued, we've put together 3 quick, easy (and delicious!) salad recipes. Whip up these tasty dishes the day before or morning of work for a lunch you'll be excited to eat! 

1. Sweet Potato Salad

Ingredients:

  • 3 sweet potatoes cut into sugar cube sized pieces

  • 2 tbsp coconut oil For the dressing:

  • 2 spring onions chopped

  • 1/2 red onion sliced very finely

  • Big handful Chives, chopped into small pieces

  • Handful parsley finely chopped

  • 3 tbsp apple cider vinegar

Method:

Roast the sweet potatoes in the oven at 200 degrees for 30 minutes or until golden brown. Let them cool.

To make the dressing, mix together the spring onions, red onion, chopped parsley with the apple cider vinegar.

Place the sweet potato in a bowl or tupperware and mix in the chives. Then pour over the dressing and give it a good mix. Then season with salt and pepper to taste.

This will taste better if you make it the day before.

2. Asian Broccoli Salad

Ingredients:

  • 1 head of broccoli, chopped (don't waste the stalk! Chop this up too)

  • 1 onion, sliced

For the dressing:

  • 3 tbsp of smooth almond or peanut butter, or if nut free use tahini

  • 1 tbsp soy sauce (use tamari if gluten free)

  • 1-2 cloves of garlic, crushed

  • 1 tbsp honey

  • pinch of salt

  • 1/2 chilli finely chopped (optional)

Method:

Put your chopped broccoli and onions into a pan with some oil on a medium-high heat. We love Cocavo. Sauté for 5-10 minutes. Boil the kettle, and after 10 minutes make a space in the middle of the pan and pour a splash of the boiling water in the middle to steam any uncooked parts of the broccoli.

Meanwhile, place the ingredients for the dressing into your nutribullet or food processor and blend until smooth. If you like your dressing to be crunchy you can add some chopped nuts once it's been blended. 

Place the broccoli and onion mixture into tupperware or a mixing bowl, pour the dressing over the top and mix!

You can eat this hot or cold - it tastes great both ways!

3. Quick courgette salad

Ingredients:

  • 2 courgettes

  • 1 chilli, deseeded and chopped

  • 1/2 lemon

  • 1 tbsp extra virgin olive oil

  • 10 Cherry Tomatoes

Method:

Grate the courgettes and put into your tupperware or a bowl. Then squeeze in the lemon juice, add the chilli and the olive oil and give it a good mix. Top with cherry tomatoes.
